Juan
Dionisio Blanco was drawn to Scotland from the
north of Spain by fish. For 33 years, as he drove
around Scotland organising the export of the fresh
product of Scottish seas back to his homeland,
he found it increasingly frustrating that he couldn't
eat seafood in Scotland. Hence Dionika.
Dionika
foodstore, wine shop and restaurant is the dream
of Juan Blanco, his passion for all things Iberian
burns brightly.
Fish
and seafood remain at the hub of this Galician's
thinking, but so to does organics and quality
of produce. Juan is serious about these issues,
using reclaimed timbers in the fitting out of
the restaurant, and sourcing ingredients from
artisan producers creating Natural food which
is then deliciously prepared to reach the mouth
in perfect condition
